Head chef at new restaurant Nikita is Andrei Pavlov, a student of one of Moscow's best known chefs - Maxim Khazov. Maxim learned the basics of Russian cooking at legendary restaurant Uncle Guilly’s, after which he launched Oblomov in the Zamoskvorechie district. Maxim and Andrei created the menu along similar lines, gathering classical Russian favourites for this new project: Mimosa salad, herring under fur coat, cod liver and vinaigrette salad with Tomilino sprats, julienne of white mushrooms and coquille of Kamchatka crab, fish soup made with fish from the north and borsch with veal, carp, home-baked beef stroganoff, chicken Kiev and Pozharsky cutlet.
